I Have Visions of Cookies Dancing in my Head
To other people, Christmas means Father Christmas or presents or the office party, Jesus or family feuds or the Queen’s Speech. To me it means cookies.
I come from a long line of bakers on both sides of the family, but it’s my mother’s side (The Italians) who put the i(cing) in Christmas.
Many people bake for a day. My family bakes for a month. Cutouts in festive shapes, iced with enough buttercream to induce a heart attack, gooey soft peanut butter cookies, chocolate pepper cookies (yes pepper) and butterballs (the clue is in the name). The cookies are delicious but it’s what they represent that feeds my soul – togetherness as I remember making them with my mom and sister, sharing the treats with friends and family and most of all, a countdown to the most wonderful time of the year! Though I’m not there now to make the cookies, Mom still gives me a running tally throughout December when we talk each week. Mmm, I can almost smell them now!
Butterball recipe (makes 3 dozen)
1 cup butter
4 tablespoons icing sugar
1 teaspoon vanilla
2 cups plain flour
1 cup chopped walnuts
Cream butter using hand or electric mixer, add sugar and beat until light and fluffy. Add vanilla and blend, then add flour a little at a time until it’s all incorporated. Fold in the walnuts.
Roll into 1 ½ inch balls and place on ungreased baking sheet (they don’t expand so you don’t have to put them too far apart). Bake for 15-18 minutes or until they’re a light caramel colour.
Roll them in icing sugar while they’re still hot.
